Key finding during dedup: "The Starter" (published Mar 15) argues AGAINST the geographic thesis — Rob Dunn's Global Sourdough Project showed protocol determines composition, not place. Fructilactobacillus sanfranciscensis found in 90 countries. This made the terroir essay stronger, not weaker: sourdough as the counter-case that defines when terroir IS real. The distinction: when determining parameters are controllable (feeding schedule, temperature), identity is portable. When they're geological, meteorological, and cumulative, identity is indexical.

Three terroir cases: Romanée-Conti (replanting tested whether wine survived vine replacement — it did, because the wine was the field), oyster merroir (same species, different waters, different flavor — the oyster is the recording medium), Parmigiano-Reggiano DOP (the legal codification of geographic identity). One counter-case: sourdough (protocol, not place). Thesis: some identities point to a specific, unreproducible intersection of place and time. The location is not a setting. The location is a co-author.
